@la_di_da I was really nervous about it for all those reasons. I have learned just how many veggies I can put in things. Sometimes things do spoil... and I feel bad... but it's definitely not every week. I do wish I could have an even smaller portion than the half share I get right now, though!

I've been surprised at how well I've been able to transform my cooking. Two years ago, or even a year ago, I would not have been able to do this. (Three years ago I literally didn't cook at all.) I have also given myself permission to make veggie-laden pizza at any time, which helps. I've only done it once, but it's still a nice back-up option! And I mean, I put asparagus, carrots, and spinach in my meatloaf. It's involved a lot of improvising and meals of questionable quality.

@ThatJenn I want a CSA so badly, but I feel like I'd never cook all that food, even if I split it with someone. And then all the lovely vegetables would rot and then I'd feel SO guilty.

On the other hand there's always the chance that I'd rise to the occasion and suddenly become the vegetable cooking guru. I somehow don't think that's likely...

@Mike Dang I get mine at Costco, but the price is the same so probably the same brand. (I forgot sauteed and put in scrambled eggs for a delicious breakfast!)

You can also stir in fresh spinach to whatever hearty brothy soup you are eating (tastes great in lentil soups, for example.)

I find fresh spinach so much easier to work with than frozen! Frozen you have to like, drain and squish and get all the water out before you use it, unless it's in a stew or something. The only thing it's better for are spinookies (spinach cookies!!), which are not really worth the trouble anyway.

I eat a ton of the green giant frozen spinach and the frozen broccoli packs. You just put them in the microwave for like five minutes. I put it in everything from pizza to pasta. Sometimes I just cook a pack, and throw in whatever happens to be lying around my house. Chicken, or whatever sort of protein I have, tomatoes, black beans, throw in some salt and pepper. It's lazy and cheap and doesn't involve any real clean up.
