My Lunch Secret Is Really a Breakfast Secret

“Breakfast for lunch! So much cheaper than lunch for lunch! Egg whites + tomatoes + feta on a whole wheat wrap = delicious, healthy, filling and less than $5. I go to Champs Deli or Flavors in the Financial District, but I feel like you can always find a deli that serves breakfast 24/7 (I don’t know how applicable this is to non-NYC people, sorry). My experience is that, unless you load it up with a ton a meat, it is always less than $5.” — Veronica Sepe

Ooh, this is good. The delis near my work don’t do 24/7 breakfast, so I get the egg sandwich with cheese and tomato for breakfast and then bring fruit and yogurt and granola for lunch. Two breakfasts!

I do a lot of lentils and rice. In a slow cooker, put a cup and a quarter of dry lentils – Puy lentils work best since they don’t lose their shape after long bouts of cooking – two and half cups of water, a spoonful of tomato paste, a tsp of oregano, a sprinkling of red chili flakes, and whatever else you have. I’ve added shredded kale, diced carrots, a whole uncooked sausage (slice up the sausage after everything’s cooked). Cook on low. Also, cook a pot of rice. I do this before bed and when I wake up I have lunch for the entire week for less than $10 total.

Cheaper and easier still (because I am very lazy and quite cheap): scramble up 4-6 eggs with some sauteed veggies & 4-6 sausage links and there’s breakfast AND lunch for the office. Great fuel for a workday starting with a workout.

Fried rice, man. Doesn’t get much easier or cheaper!
