Cheap Eats: Black Bean Tacos

Here at The Billfold, we love cheap and easy recipes, and a few of you have been emailing me your favorites (please continue to do so!). I would also like to share this website, Economy Bites, which has a ton of great cheap recipes, but sadly stopped updating last year. They’ve kindly kept their archives open.

Okay! Without further ado: Here’s a cheap and easy recipe from reader Christine Nelson:

I have no recollection of where this came from; I think I was making black bean tacos and noticed that I was putting in way more time than was totally necessary. So, here goes.


• One can of black beans
• One jar of pre-made salsa or pico de gallo
• Taco shells and whatever toppings you fancy

Drain and rinse the black beans. Toss them in a large pan with half the jar of salsa. Simmer—maybe 10-15 minutes—until the beans are in whatever stated of cooked-ness that you prefer them. Dump it in a taco shell, top it with cheese or guacamole or that leftover hummus that’s been languishing in your fridge, and done!

Limes! Cilantro! Hot sauce! Unless you are one of those poor souls for whom cilantro tastes like soap, the holy trinity of lime/cilantro/hot sauce elevates even the most budget rice and beans to greatness.

@cowboykiller I (condescendingly?) weep for those cilantro haters–I would consider it a full-on disability to not be able to taste how fabulous cilantro is.

Oh, you guys would love Budget Bytes. Updates regularly, a HUGE archive of recipes, and little cost breakdowns of the ingredients. I’ve made a few recipes from here that have become staples (chili lime shrimp bowls, mmm) and am now apparently a total shill for the site.

I highly recommend buying a whole frozen chicken. You can get one for under $5! It takes a while to cook (like 2.5 hours), but it’s worth it! Because you’ll have lots of chicken AND if you have some extra time, you can make your own chicken broth.

It requires a little more time and effort, but if you buy dry beans it will be much cheaper and taste better.

Did this! Threw in some cumin, garlic, and onion. Topped with chez, sour cream, and salsa. Yay.
