Chicken feet are delicious.

And I nearly wept at the sight of that jamon Iberico. My great-aunt who lives in Spain keeps one of those in her little storehouse that used to be the dairy when she still had a cow. It was some of the best stuff I have ever put in my mouth.

So you mentioned that the meat comes from the sad factory places when you buy it at the basic chain markets, but if in my neighborhood I have that option, or a Chinese market, which is better? (Since you never really said where that meat comes from/don't know)

Where is that butcher in Chinatown?

Peking Ducks have their heads on because it is easier to tie off because the the skin must be separated from the flesh. That is done by pumping air into the duck. If the head is cut off that is difficult to do. Moreover, I believe the Chinese would view not using the head it as wasteful.

For farmed and other seafood you can also use the assessments and guides at Seafood Watch. They focus on the sustainability side rather than the human health side.

Are the frogs hidden because they are a health hazard or because they are illegal to catch?

Isn't it more traumatic to butcher an animal that had a happy life than one that only knew misery?

@Mike Dang I would have cried too. I'm not a vegetarian, but I am an Aunt to three turtles (don't ask) one of which was rescued from Chinatown (and named after Hizzoner). And it would be soooo saaaaaad to imagine him as soup.

Me: Did you get a photo of those guys butchering those turtles?
Logan: No, I was too busy crying.
Me: Logan, you can't cry while reporting a story. Reporters don't cry.
Logan: I'm not a reporter!
Me: Listen, I'm not heartless! I would have cried and taken that photo at the same time.
